Persian barberry rice or "Zereshk Polo", is another tasty Polo Iranian cuisine. As with other traditional dishes such as "Jujeh Kabab" or "Baghali Polo" Polo Zereshk very popular as the dishes are presented in formal ceremonies and important.


This dish is easy to prepare, even for a large number of people; here you will see how to cook this dish in a professional to family and friends.

  • 5 cups of rice

  • 6 Chickens

  • 1 tablespoon tomato paste

  • 1 tablespoon Lime Juice

  • 1/8 tbsp Saffron

  • 1 cup Barberry

  • 1 onion

  • As required Pistachio Slices

  • As required Almond Slices

  • As required Salt, Black Pepper

First, you need to cut up chicken in the size you want for 4 to 8 pieces (It is better to use breast or thigh). Wash these pieces, and sprinkle salt on all their surfaces. Then fried chicken in a pot with salt and when they are fried, take them out of the pan.
Dice the onion and saute in the same skillet. Add the tomato paste, salt, black pepper, and lemon juice and continue stirring.
Pour the sauce into another container, put the chicken pieces in the pan and pour the sauce on the chicken.
Now add 3 or 4 cups of water to the pot (from the side and not directly on the chicken), put a lid on the pan and wait until the water begins to boil. Afterwards, lower the heat and allow the chicken to cook. In the last 5 minutes, add the saffron and then the chicken is ready.
To prepare Polo, first you need to soak the rice in warm water with salt for 1 to 2 hours.
After this time, put the pot with hot water in it and wait until boiling.
Now strain the soaked rice and add to the pot. Wait until the water begins to boil, remove the foam, and higher rice. Strain the rice when you see a few grains on the surface.
Rinse the pan and place on medium heat. Add 2 tablespoons of oil and ½ cup water (and some turmeric if you want Tahdig you have a better color) in it.
Pour the rice into the pan, add a cup of water and oil on it, put the lid and increase the heat.
When the rice began to steam, close the lid with a cover of steaming rice and reduce heat.
Now barberries soak in water and then strain. Pistachio and almond slivers Rinse well and fry in butter and then remove.
barberries stir-fry on a gentle heat. Add 1 tablespoon turmeric brewed and then turn off the fire.
When the chicken and rice are both ready, mix some rice with 2 to 3 tablespoons of turmeric rice brewed for decoration.
Polo garnished with barberries, pistachio and almond slices and serve with the chicken. We also recommend Dough, rosewater or orange sherbet blossom acid as a drink with this dish. Enjoy!
